Lazy Vegetarian: Day 6

Breakfast with Adele and Fiona:
Latte, toast.

Some friends came over to play this morning after Adele had physical therapy so we made some more cookies to share. Apparently I learned nothing about the danger of cookies on Monday.

So for lunch we all shared the food we brought. Vicki made healthy applesauce crepes which were yummy, especially with the apple stuff she made to put inside them. Sang made fancy pineapple and later accepted the challenge to prove he could actually make a swan out of an apple. He really can, it was very impressive! I made a couple of boring sandwiches and the cookies.


I'm including a picture partly because it's cool and partly because later in the day I callously ate it. I think it tasted even better because it was in swan form.

After lunch we ate cookies.

Pretty lazy dinner: enchiladas*, mexican rice.

*Enchiladas:
Tortillas (I used whole wheat)
Red Enchilada sauce (I used Trader Joe's)
Veggies
Cheese
Some kind of additional protein if you like

I fried onion, mushrooms and green peppers along with some Quorn turk'y burger patties. I saved a patty and a half for the girls and chopped the rest up and put them back in the pan with the veggies. I mixed half of the sauce in with that stuff then split it between five tortillas, which I then rolled up. I poured the rest of the sauce over the rolled up tortillas and sprinkled cheese over the whole thing. Then I put it in the oven at 370 for 15-20 minutes. I served them with mexican rice. They were delicious, even if that picture makes them look seriously dodgy.

I am impressed with the swan - very clever! The enchilladas may look a little suss, but I am sure they tasted great.
